When fresh squid is available, I like simmering it in soy sauce based soup. If I have a little extra time to cook, I make some filling and stuff prepared squid with it. Stuffed squid is a great addition to a Japanese-style meal. This recipe uses chicken for the filling.

Have you had Japanese Kyoto-style dishes? A user of our forum writes, "I frequent this Japanese restaurant where they serve mainly traditional Kyoto style food. There is one dish in particular that I love, but I am not sure of the name or what is in it. All I know that it is like a mash potato or taro ball submerged in a clear broth. I love it and I just was wondering it's name so that I can get a recipe for it."

Gyoza are delicious dumplings known as Japanese potstickers. Gyoza is cooked in various ways: deep-fried, boiled, steamed, or pan-fried. The most common way to cook gyoza is pan-fried. Bottoms of pan-fried gyoza should be brown and crunchy. I usually make lots of gyoza at once and freeze the extras before cooking. Gyoza Photo © Setsuko Yoshizuka, licensed to About.com
